Cajun Dirty Rice

Dirty Rice Spice Seasoning:
1.5 tsp sea salt
1.5 tsp pepper
1.5 tsp paprika
1 tsp ground yellow mustard
1 tsp ground cumin
1/2 tsp thyme
1/2 tsp oregano
1/2 to 2 tsp cayenne depending on flavor preference

Dirty Rice Ingredients:
2 TBS Extra Virgin Olive Oil
1/2 lb Chicken Gizzards, fine chopped
1/4 lb Ground Pork
Spice Seasoning
2 Stalks Celery, fine chopped
1 Bell Pepper, fine chopped
1 Small Yellow Onion
3 Cloves Garlic, fine chopped
2 TBS Butter
2 Cups Chicken Stock
1/3 lb Chicken Livers, drained and chopped fine.
3/4 Cup Uncooked White Rice

Dirty Rice Procedure:
- Grind and combine Spice Seasoning
- Brown Gizzards and Pork in the Olive Oil
- Add seasoning blend to pork/gizzard mixture and stir well
- Add celery, bell pepper, onion and garlic. Stir well to combine
- Add butter. Melt and cook 8 minutes over medium heat
- Add stock and cook 8 minutes over high heat
- Add chicken liver, stir to combine and cook 2 minutes
- Add rice, stir well and reduce heat to low simmer and cook covered until rice is done and moisture has been absorbed
- Adjust seasoning and serve with Andouille Sausage links and greens sautéed in bacon fat.
