TROPICAL PALEO GRANOLA (Adapted from NOMNOMPALEO.COM) (Grain Free)

INGREDIENTS:
1 Cup dried pineapple pieces
1/2 cup dried currants - rough chopped
Juice of 1 orange
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4 cup coconut oil, melted
1/4 cup Grassfed Butter
½ teaspoon kosher salt
3 cups raw almonds
3 cups raw coconut flakes
1 cup raw macadamia nuts, rough chopped
½ cup raw sunflower seeds or sub shelled pistachios
½ teaspoon kosher salt

PROCEDURE:
Preheat oven to 250F
In food processor, blend pineapple, currants, orange juice, vanilla, and cinnamon until liquefied.
Melt coconut oil, butter and salt on stove and pour into blender. Blend until smooth.
In blender or food processor, rough chop almonds, coconut, macadamia nuts and sunflower seeds.
Combine all in large bowl and mix together well using your hands.
Spoon wet ingredients onto dry ingredients and using a wooden spoon, stir everything until mixed well.
Divide mixture evenly onto 2 parchment lined sheet pans, and spread to thin layer.
Place in oven to bake for apron 2 hours, stirring every 20 minutes or so. Rotate sheet pans after an hour.
Watch carefully during final hour, it will burn in the blink of an eye.
Remove from oven and allow to cool to room temperature.
Pack in airtight containers
