MAPLE CINNAMON GRANOLA (Grain Free)

INGREDIENTS:
1/4 cup raw cashews
1/4 cup raw walnuts
1/2 cup raw shelled pistachios or sunflower seeds
1/4 cup raw pumpkin seeds (pepitas)
3/4 cup raw unsweetened coconut flakes
1/2 cup dried cranberries or raisins
1/4 cup coconut flour
1 TBS Chia seeds (optional)
2 tsp cinnamon
1 tsp allspice
1/2 tsp ginger
1/4 tsp salt
2 TBS Coconut Oil
2 TBS Grassfed Butter
4 TBS Maple Syrup
2 TBS Almond Butter
1 tsp vanilla

PROCEDURE:
Preheat oven to 320F.
Process nuts, seeds, coconut flakes and dried fruit in blender or food processor to break up into varying sized pieces.
Place processed dry items in large mixing bowl and stir well to combine all dry ingredients.
In second bowl place coconut flour, chia seeds, spices and salt stirring well to combine.
In third bowl, heat coconut oil and butter for 20-30 seconds in microwave. Stir oils to combine.
Whisk in maple syrup, almond butter and vanilla to heated oil/butter.
Add spice mixture to oil mixture and stir well to combine.
Add wet ingredients to dry and stir all to coat well.
Spread mixture evenly on parchment lined sheet pan.
Bake 20-25 minutes or until lightly browned, stirring every 10 minutes or so.
Remove from heat.
Allow to cool until hardened, then break into chunks.
