HONEY ALMOND GRANOLA (Grain Free)

1 cup raw almonds
1 cup raw cashews
1/4 cup raw pumpkin seeds (pepitas)
1/4 raw shelled sunflower seeds (or substitute shelled pistachios)
1/2 cup raw unsweetened coconut flakes
1/4 cup coconut oil
3-4TBS raw local honey
1 tsp vanilla extract
1 tsp sea salt
1 cup raisins, currants or other dried fruit
Preheat oven to 275F.
Process nuts, seeds and coconut flakes in blender or food processor to break up into varying sized pieces.
Place processed dry items in large mixing bowl and stir well to combine all dry ingredients.
In medium glass bowl, heat coconut oil, honey, vanilla and salt in microwave for 30 seconds. Stir well to combine.
Add wet ingredients to dry and stir well to coat.
Spread mixture evenly on parchment lined sheet pan.
Bake 25-30 minutes or until lightly browned, stirring every 10 minutes or so.
Remove from heat, sprinkle raisins evenly over sheet pan, pressing them into the mixture.
Place 2nd sheet of parchment over mixture and press/roll with another sheet pan or with rolling pin to flatten mixture.
Allow to cool until hardened, then break into chunks.
